The Best Dukan Dinner!!!!

I Felt like something exotic tonight.  Inspired by a recent trip to Wellington, I decided to see if I could adapt a genuine Ralph Brennan's Jambalaya to suit the Dukan Diet.  It turned out so very well that I thought I should share!

Cush's Smoky Jambalaya
Dukan Diet PV Day.
Serves 1
Diced capsicum (I used red yellow and green)
Diced red onion
crushed Garlic to taste (I used a teaspoon)
crushed chilli to taste (I used a teaspoon)
Diced smoked ham
Diced cooked chicken
Smoked salmon
Diced tomatoes
Cajun or Creole seasoning
Chicken stock (low salt)
Water

Dry fry the onions, garlic and chilli in a hot pan, cooking the onions till tender.
Add the capsicum and a drizzle of water.  Keep the pan with just a little water in it.
Add the meat, heat thoroughly.
Add the smoked salmon.
Add the diced tomatoes and spices, taking care not to burn the spices.  Add a little water if necessary.
Cook the tomatoes down, then add the chicken stock.
Reduce the heat and let the mixture simmer for 5 mins.

Serve piping hot!

Great recipe!

I needed something sweet tonight ... chocolate was looking mighty tempting.  On my travels I could remember seeing a recipe for cinnamon pancakes.  Why not give it a go?  I must say ... very nice indeed!  Very filling and would be great for a weekend breakfast.

Cinnamon Pancakes

 Ingredients
 Cinnamon 1/2 tsp
 Egg 1
 Oat bran 3 tbsp
 Sweetener 2 tbsp (optional)
 Vanilla yogurt 2 tbsp (low fat)

Instructions

1   Whisk the egg and then slowly whisk in the vanilla yoghurt.
2   Stir in the sweetener, cinnamon and oat bran.
3   Use some spray oil to heat up a frying pan and pour the mixture in, cooking for a couple of minutes on each side until brown.

Hi and welcome!

I am a 38 year old antipodean.  I have struggled with weight all my adult life but after the recent earthquakes, I have tended to turn more and more to food for comfort, and so have put on a lot of weight in a very short space of time.  Now is the time to lose it.

Over the years I have tried many things, eating healthily, Weight Watchers, swimming and even being a gym bunny.  Nothing has been as successful as I would have liked.  I have had major trouble with my back and the nerves around that, and I have PCOS ... great fun.  If I don't do something now, diabetes is knocking on the door.

I recently had the honour of being the Maid of Honour at my friend's wedding.  I hate (and I do mean hate) looking at most of the photos of me at that wedding.  I really don't like what I see.
From all bad things come some good.  The bride, my friend Kirsty, was once a large girl too.  She drew a line in the sand, found a diet that she could manage and shrunk ... dropping weight life the trees drop their leaves.  That diet was the Dukan Diet.  She is my inspiration and this is my Dukan adventure.

I am currently on day 3 of 6 in the attack phase, and I have found the blogs that others have posted, sharing their Dukan experience invaluable.  I have turned to these for inspiration, hints and recipes.  I hope that this blog, and my experiences, will help someone else out there who find themselves in the unenviable position of losing weight.
