Inspired by a recent trip to Wellington, I decided to see if I could adapt a genuine Ralph Brennan's Jambalaya to suit the Dukan Diet.&amp;nbsp; It turned out so very well that I thought I should share!&lt;br /&gt;&lt;br /&gt;Cush's Smoky Jambalaya&lt;br /&gt;Dukan Diet PV Day. &lt;br /&gt;Serves 1&lt;br /&gt;Diced capsicum (I used red yellow and green)&lt;br /&gt;Diced red onion&lt;br /&gt;crushed Garlic to taste (I used a teaspoon)&lt;br /&gt;crushed chilli to taste (I used a teaspoon)&lt;br /&gt;Diced smoked ham&lt;br /&gt;Diced cooked chicken&lt;br /&gt;Smoked salmon&lt;br /&gt;Diced tomatoes&lt;br /&gt;Cajun or Creole seasoning &lt;br /&gt;Chicken stock (low salt)&lt;br /&gt;Water&lt;br /&gt;&lt;br /&gt;Dry fry the onions, garlic and chilli in a hot pan, cooking the onions till tender.&lt;br /&gt;Add the capsicum and a drizzle of water.&amp;nbsp; Keep the pan with just a little water in it.&lt;br /&gt;Add the meat, heat thoroughly.&lt;br /&gt;Add the smoked salmon.&lt;br /&gt;Add the diced tomatoes and spices, taking care not to burn the spices.&amp;nbsp; I have struggled with weight all my adult life but after the recent earthquakes, I have tended to turn more and more to food for comfort, and so have put on a lot of weight in a very short space of time.&amp;nbsp; Now is the time to lose it.&lt;br /&gt;&lt;br /&gt;Over the years I have tried many things, eating healthily, Weight Watchers, swimming and even being a gym bunny.&amp;nbsp; Nothing has been as successful as I would have liked.&amp;nbsp; I have had major trouble with my back and the nerves around that, and I have PCOS ... great fun.&amp;nbsp; If I don't do something now, diabetes is knocking on the door.&lt;br /&gt;&lt;br /&gt;I recently had the honour of being the Maid of Honour at my friend's wedding.&amp;nbsp; I &lt;b&gt;hate&lt;/b&gt; (and I do mean hate) looking at most of the photos of me at that wedding.&amp;nbsp; I really don't like what I see.&lt;br /&gt;From all bad things come some good.&amp;nbsp; The bride, my friend Kirsty, was once a large girl too.&amp;nbsp; She drew a line in the sand, found a diet that she could manage and shrunk ... dropping weight life the trees drop their leaves.&amp;nbsp; That diet was the &lt;a href="http://www.dukandiet.co.uk/"&gt;Dukan Diet&lt;/a&gt;.&amp;nbsp; She is my inspiration and this is my Dukan adventure.&lt;br /&gt;&lt;br /&gt;I am currently on day 3 of 6 in the attack phase, and I have found the blogs that others have posted, sharing their Dukan experience invaluable.&amp;nbsp;
